On February 8 | 5–7pm, we return to @onlycoffeeproject for a focused cupping session built around comparison and clarity.

1. Table One – Ethiopia | @alocoffee.et (Sky Project)
All Ethiopian coffees on this table come from Alo Station, part of the Sky Project.

Sky Project is a long-term initiative dedicated to redefining Ethiopian coffee through extreme altitude separation, meticulous cherry selection, and transparent, experimental processing. Instead of blending volume lots, the project isolates micro-climates and processing variables — allowing Ethiopia’s flavour to be expressed with structure and intent.

This flight explores how different processing methods applied to the same origin reshape aroma, acidity, and texture — from clean washed profiles to anaerobic and sun-dried expressions.

2. Table Two – Colombia | Finca La Negrita
Representing a new generation of Colombian producers, @fincalanegrita focuses on precision fermentation and post-harvest control.

High-altitude lots meet yeast-driven processes, nitrogen washing, honey styles, and controlled dark-room drying — each lot treated as an individual recipe designed to maximise sweetness, complexity, and mouthfeel while staying balanced.
