One farm. Six roasters. Vol.11 is our first single-origin show — every coffee on the table tonight comes from Hacienda La Esmeralda, the Boquete estate that didn't just win Best of Panama in 2004, it created the category. Geisha had been growing quietly on the slopes of Volcán Barú for years before the Peterson family separated it out, entered it into competition, and watched the bidding hit $21 a pound — ten times the going rate at the time. In 2025, Esmeralda did something no farm had done in the auction's 29-year history: swept all three categories, with a washed lot fetching over $30,000/kg, a new world record.
What changes tonight is who's behind the roast. We've pulled lots from five roasters across China, plus our own house roast, to see how differently one farm can taste once process and roast curve enter the picture.
Reading the lot codes
Esmeralda names every lot by plot, harvest number, and process — think Trapiche 3FB or Mario Arriba 3BANC. The letters spell out how it was made: W washed, F cool-fermented washed, N natural, A anaerobic fermentation, B dried on raised beds, C finished in a climate-controlled room. Stack them and you've got the recipe — FB is a fermented washed lot dried slowly on beds, NC is a natural finished in climate control, AFB is an anaerobically fermented washed lot, bed-dried.
Two farms, two characters
Jaramillo is where it started — the foggy, high-altitude plots (1,600–1,700masl) where Geisha was first set apart, prized for an ethereal, tea-like clarity; Mario and Noria are two of its best-known names. Cañas Verdes, part of the Petersons' original estate, sits higher and drier, and its named plots each carry a signature: Tumaco leans jasmine and chocolate, Leon strawberry and peach, Trapiche jasmine and lemon, Fundador melon-sweet, Cabaña watermelon and peach. Tonight's lineup draws from both — naturals next to washed, anaerobic next to classic, fifteen coffees tracing one farm's range.
