Elida Estate's Dark Room Dried process takes the Vuelta lot — grown deep inside Baru Volcano National Park — and slow-dries it in a purpose-built, temperature-and-humidity-controlled dark room instead of the open sun. No rush, no funk, just weeks of patient control that lock in clarity. It's the same painstaking process that's helped the Lamastus family sweep Best of Panama's washed and natural categories in the same year, a feat no one else has managed. In the cup: chamomile, sweet orange, honey plum, with a silky body and a long, tea-like finish.
