From early experiments with fermentation and processing to increasingly ambitious approaches, each harvest has brought something new to the table.\u003c\/p\u003e\n\u003cp\u003eThis year, we're bringing the experience to Melbourne, together with Issac, the founder of Small Arms Big Heart and the person behind Yunnan Harvest Report.\u003c\/p\u003e\n\u003cp\u003eBased in Baoshan, Yunnan, Issac has spent years exploring coffee fermentation, post-harvest processing, and the possibilities that come with them. His work goes beyond creating unusual flavours. It's about understanding what happens during fermentation, how different techniques influence the final cup, and what these discoveries could mean for the future of Yunnan coffee.\u003c\/p\u003e\n\u003cp\u003eFor this year's report, he's bringing 22 coffees from the 2026 harvest, most of them processed by Issac himself, with more than half being Geishas.\u003c\/p\u003e\n\u003cp\u003eBehind each coffee is a different experiment, a different approach, and a story worth sharing. Some worked beautifully, others didn't quite go as planned, but that's exactly what makes this project interesting.\u003c\/p\u003e\n\u003cp\u003eFor us, this cupping has never been just about tasting great coffee.
