THE STORY

From Finca El Pergamino in Bambito, Cerro Punta — one of Panama's most overlooked high-altitude growing zones at 1,850–2,200 masl — Yaneth De Lucich's Bourbon grows in cool volcanic soils beneath a native forest canopy that slows cherry maturation and concentrates flavour. Classic washed processing is a deliberate choice here: hand-sorted ripe cherries are depulped, fermented, washed with mountain spring water, and slow-dried under controlled conditions — letting the variety's inherent character speak without interference. In the cup: citrus, bergamot, and jasmine, with a refined floral finish.
