THE STORY

ARIL is Finca Deborah's proprietary hybrid process — combining extended natural carbonic maceration with a washed finish. Fully ripe Geisha cherries are sealed in nitrogen-flushed tanks and fermented under precisely controlled conditions, before being washed, depulped, and dried across a three-stage raised-bed system. The process bridges the aromatic intensity of anaerobic fermentation with the clarity of washed processing. In the cup: floral, grape, prune, and hawthorn, with a silky texture and a clean, wine-like finish.
