THE STORY

AETHER is Finca Deborah's most experimental process — argon maceration washed. Fully ripe Geisha cherries are sealed in stainless steel tanks, flushed with argon — a noble gas denser and more chemically stable than CO₂ or nitrogen — and fermented for 50 hours under continuous monitoring of pressure, temperature, and pH. The argon environment creates a purer, interference-free fermentation space, allowing the Geisha's own flavour precursors to develop with exceptional clarity. In the cup: blackberry, dried pineapple, and tropical fruit, with a refined texture and a clean, lingering finish.
